Other names: Arrowhead Spinach

General Information: This is Japanese spinach, designed to be grown for summer harvest. This spinach hybrid has dark green, thick, serrated leaves with an arrowhead shape. The spinach is also available as a red variety with red stems and veins much like the coloring in red chard. This hardy green will tolerate hot and dry conditions and is slow bolting which makes it a good item to plan for the spring and through the summer. Use this mild spinach in salad, stir-fry or steamed.

A traditional and elegant Japanese appetizer is made from lightly cooked spinach rolled tightly and topped with a dressing made from sesame seeds, soy sauce, sugar and fish stock.
