Tomato-Basil-Mozzarella Penne

1/4cupolive oil
4clovesgarlic, minced
28ozchopped tomatoes
1cupjulienne basil
6ozfresh mozarella cheese, cubed
1poundpenne pasta, cooked

salt & pepper

Heat olive oil in large saute pan. Add garlic and heat until slightly golden. Add chopped tomatoes. Season with salt and pepper. Heat over low heat for 20 minutes. Remove tomatoes from heat. Add hot penne noodles to sauteed tomatoes. Toss well. Add basil and mozzarella. Toss again. Serve immediately.
