Chive, Smoked Salmon and Goat Cheese Omelet
|4||oz||smoked salmon, small pieces|
|3||oz||goat cheese or feta cheese|

Heat oil in large non-stick pan. Add eggs and cook over low heat. Season with salt & pepper. Stir occasionally with spatula until eggs set. Add smoked salmon, chives and cheese to left half of eggs. Fold right half of eggs over to form omelet. Cut omelet into 4 triangular shaped pieces and serve immediately. Serving suggestions: serve with roasted fingerling potatoes, grilled portobello mushrooms, sliced asian pears and fresh-squeezed blood(Moro) orange juice.
