Creamy Bacon-Chive Dressing
Serves: 4


1/4cupPlain Yogurt
1tablespoonExtra Virgin Olive Oil
1tablespoonFresh Squeezed Lemon Juice
1tablespoonChives, chopped
1teaspoonWhole Grain Mustard
3-4slicesCrispy Cooked Bacon, crumbled
1pinchCoarse Salt
1pinchFresh Ground Black Pepper

Combine all ingredients except bacon in large bowl. When smooth, creamy consistency is achieved, add bacon crumbles. Season with salt and pepper to taste. This dressing pairs especially well with baby spinach, arugula and sorrel. And it adds zest to a roast beef and grilled onion sandwich. Also may be used as a dressing for a lovely fingerling potato salad.
