Baby French Bean Salad with Lemon, Garlic and Oregano

2poundsBaby French Beans, or Standard Green Beans
4clovesGarlic, minced
1/3cupFresh Squeezed Lemon Juice
2/3cupExtra Virgin Olive Oil
1/4cupFresh Oregano Leaves, chopped

Fill stock pot with 3 quarts water and bring to a boil. Trim ends of beans. Place beans in boiling water for 3 minutes. Drain beans and plunge into ice water. Drain completely and set aside. Place garlic and lemon juice in a small mixing bowl. Slowly whisk in olive oil. Toss beans in lemon mixture and fresh oregano. Season with salt and pepper to taste. Chill for about 30 minutes before serving. Optional: toss in some fresh grated parmesan or feta cheese just before serving.
