Baby French Bean Salad with Lemon, Garlic and Oregano
|2||pounds||Baby French Beans, or Standard Green Beans|
|1/3||cup||Fresh Squeezed Lemon Juice|
|2/3||cup||Extra Virgin Olive Oil|
|1/4||cup||Fresh Oregano Leaves, chopped|

Fill stock pot with 3 quarts water and bring to a boil. Trim ends of beans. Place beans in boiling water for 3 minutes. Drain beans and plunge into ice water. Drain completely and set aside. Place garlic and lemon juice in a small mixing bowl. Slowly whisk in olive oil. Toss beans in lemon mixture and fresh oregano. Season with salt and pepper to taste. Chill for about 30 minutes before serving. Optional: toss in some fresh grated parmesan or feta cheese just before serving.
