Sorrel
Creamy Sorrel Soup
Serves: 4

Ingredients:

3tbspbutter
1eachyellow onion, diced
1tspsalt
1/2tsppepper
2cupssorrel leaves, chopped
2quartschicken stock
2tbspflour
2tbspwater
1cupheavy cream
1/8tspground nutmeg

Procedure:
Melt butter in saute pan over low heat. Add onion, salt and pepper, and cook until softened. Add sorrel, reduce heat to low, cover and cook until slightly wilted. Mix flour and water to make a slurry. Add stock and flour slurry. Raise heat to medium. Simmer for 10 minutes until thickened. Add cream and heat on low for 3 more minutes. Add nutmeg, and adjust salt and pepper if needed.
